Yesterday I bought a 3 lb bag of your Ham's Yams. It was the first time I had seen your NC product in my local WalMart. That doesn't say it hasn't been there, it just caught my eye yesterday because I am originally from NC. I looked the bag over to see if there is a date when it was packed and shipped, but can find nothing on the bag. My problem, the yams have black spots on them. I took a brush and tried to wash it off, but the skin is still discolored. I am wondering if WalMart is not properly storing your yams. I know that growing them organic they are not going to be beautiful, just good. Is your soil black rich dirt that could cause the discoloration. I usually cook mine with the skin on, but would hesitate to cook the ones in this bag without peeling. Wanted to make you aware, it is early for this years crop if I remember correctly, could it be these have been in storage. As the yams are in a bag, you don't really see the product closely until you get home and if folks are first time buyers, they may be last time buyers if they get a bag like I did. Would like your input because I do want to support your farming buying from a hometown company.
